New Name, New Owners For The Springs Tavern in East Hampton

Springs Tavern and Grill reopened this summer in East Hampton with a new name and news owners. Formerly The Springs Tavern, this historic spot is now managed by Alex Rossi, a veteran to the restaurant industry that lives in Springs with his family. 

“The new regime is spearheaded by Alex Rossi who resides in Springs with his family and grew up in the restaurant business in New York City – his father Rubrio Rossi owned the highly acclaimed Parioli Romanissimo on the Upper East Side,” the restaurant announced to LongIsland.com readers.

The new spot will be more casual and accessible but maintain a high quality of food, according to Rossi.

“We know the community will welcome an affordable restaurant that still serves high quality dishes and that’s exactly what we plan to do,” he said on Facebook. “You can come here to watch sports and enjoy a classic Tavern burger but you can also order an elegant wine and delectable Bolognese.”

Rossi said that he envisions a year-round eatery with affordable prices and a welcoming atmosphere. Look for a revamped ambience in the completely renovated interior and a beachy and inviting upgraded outdoor dining area and lounge. Rossi also partnered with Raul Rodas, a veteran professional of such East End restaurants as Indian Wells Tavern, 1770 House and Coche Comedor, who will manage the day-to-day operations. Chef Fabian Rodas will be at the helm.

The menu will feature starters, salads, mains and Tavern favorites, along with a delicious grilled selection where diners can pick a protein side to enjoy.  As a treat, Springs Tavern and Grill will also have some classic Parioli dishes for diners to savor. The restaurant will not take reservations and takeout will be available.

 

The selection of menu items, subject to change, will include starters like Crispy Calamari with sriracha mayo and marinara sauce, Blistered Shishito Peppers with chive and lime crema and Burrata & Grilled Endive with house made ramps and basil pesto. The tavern favorites include Onion Soup Au Gratin with sweet onions, Swiss cheese, and croutons their Tavern Burger, which is a signature burger blend, char-grilled to your liking served on a toasted brioche with Boston lettuce, tomato, onion, pickle and served with Tavern fries, and a Crispy Chicken Sandwich, lightly breaded chicken breast served on a toasted brioche bun with basil aioli, arugula, tomato, onion, pickle and Tavern fries They will also serve Fish & Chips, which is fresh cod fish, fried to a golden crispy and served with Tavern fries, cole slaw, and homemade tartar sauce.

Main courses include Pan-Seared Salmon over cauliflower purée, carrots, chickpeas, shallots, and green wild garlic oil, and a Rubrio Rosi Pasta alla Bolognese, a Parioli’s crowd pleaser – signature Bolognese sauce served with rigatoni and pecorino Romano.
