Centro 336 in Hampton Bays Ushers in a New Era as the East End Transitions to a Year-Round Destination
Usually famous for its sun-soaked summers, the East End is now being reimagined as a year-round hotspot. With support from Discover Long Island’s new campaign to promote the Hamptons scene and beyond through the fall and winter, restaurants like Centro 336 are stepping up to offer more than just a summer escape. Under new ownership, Centro 336 at 336 W Montauk Hwy in Hampton Bays is redefining itself, keeping its classic appeal while preparing for exciting changes.
John Nicoletti and Vincent Marino, the new owners of Centro 336, have a long-standing history in the restaurant industry, and their shared dream of owning a place together has finally come true.
“Vinny and I have known each other for about a decade,” says Nicoletti. “We always talked about opening our own spot, and when this came on the market, we jumped at the opportunity. We saw the bones of the restaurant, and it was clear—this place had potential.”
Centro 336 keeps many of the aspects that made it beloved but the new duo are planning a fresh direction.
“We want to be a little less red sauce and a bit more contemporary American-Italian,” Nicoletti said.
While old favorites like Grilled Branzino, Chicken Milanese and Veal Sorrentino remain on the menu, the goal is to add more innovative dishes, incorporating local ingredients from the North and South Fork farms and oyster beds.
“We’re lucky to be in such a rich area for produce and seafood. Over time, we really want to build relationships with local suppliers and make that part of our identity,” said Nicoletti.
The restaurant is also working to enhance the guest experience by hosting weekly events, like Take-Out Tuesdays, where customers can enjoy half-trays of Italian favorites such as Eggplant Rollatini or Shrimp Francese, with prices starting at $45. Football fans are welcome to hang out in the bar area for Game Day Sundays, Mondays and Thursdays, and their Ladies’ Night will offer a free cocktail, great music, and an exciting atmosphere every week.
“We’re trying to create something for everyone,” Nicoletti said. “We want people to know they don’t have to wait until summer to come here—Centro 336 is going to be buzzing all year long.”
In addition to dining, Centro 336 is gearing up to be a prime destination for private events. The restaurant’s layout offers flexibility, with multiple private spaces and a patio that can be transformed for parties, showers, and even corporate gatherings. There is a light, airy, welcoming vibe inside no matter which room you’re in.
“Whether it’s an engagement party or a pharmaceutical dinner, we have packages that fit all needs,” Nicoletti said.
One of the highlights that sets Centro 336 apart is their plan to launch a specialized whiskey and wine program.
“We’re working on expanding our wine list, but also creating a whiskey portfolio that offers something really unique,” Nicoletti explained. “That’s something we’re really excited to roll out as we move into the fall.”
Despite the challenges that come with taking over an existing restaurant, Nicoletti is optimistic about the future.
“Opening a restaurant is always tough, and this summer was a whirlwind, but we learned a lot,” he shared. “The goal now is to separate ourselves—it’s about finding our identity.”
The timing for Centro 336’s transition couldn’t be better, as the Hamptons pivot towards a four-season destination. Discover Long Island’s new campaign, backed by a $300,000 budget, is aimed at reminding people that the East End isn’t just for summer vacations. According to recent tourism reports, Long Island saw 41.8 million visitors in 2023, but the push now is to keep those visitors coming through the fall and winter, some of the best times of year. Nicoletti and Marino are keen to be a part of this shift.
“The Hamptons are just as beautiful in the cooler months, and we’re here to offer a warm, welcoming place for locals and visitors alike,” Nicoletti added. “We couldn’t be more excited to be part of this community, and with all the changes coming, we’re ready to keep things lively no matter the season.”
