NYC Restaurant Group Bringing Puerto Rican Flair to Montauk’s Ruschmeyer’s Hotel With Placēbō

A hospitality management group from New York City is bringing their own flair to Montauk this summer. The owners of Somewhere Nowhere lounge at the Renaissance hotel in Chelsea and Greek restaurant 9 Jones in Greenwich Village took over Ruschmeyer’s Hotel in Montauk, infusing it with fresh energy through new dining and lounge concepts.

The management of Ruschmeyer’s Hotel marks their first foray into hotel operations, with the property located at 161 Second House Road. The hotel will debut two new food and beverage concepts just in time for the Memorial Day weekend.

Placēbō, a Puerto Rican New American fusion restaurant, promises to transport guests to the lush landscapes of Puerto Rico. Designed by Lymarie Bried Fuentes of Let it be Made ‘8’, the 4,693 square foot space will feature earth tones, tropical leaves, and elements inspired by Puerto Rican heritage, from the Taíno to the El Yunque National Forest.

The menu at Placēbō, crafted by Chef Sandy Dee Hall (known from Diners, Drive-Ins and Dives and Netflix’s Snack vs. Chef), will combine New York City energy with Latin flair. Signature dishes include house-made squid ink linguine with Long Island clams and fresh uni, A5 Wagyu Risotto Paella, Scallop Pot Pie with Long Island sweet corn, and Whole Fried Red Snapper with plantains and Mojo Criollo. The cocktail program will feature Latin-inspired takes on classic cocktails, complemented by a curated selection of local brews and summer staples.

“We’re thrilled to infuse Ruschmeyer’s experience with our signature blend of Montauk charm and NYC-style hospitality,” says co-owner Nathan Leong in a statement. “This season marks a fresh start, and Placēbō is just the beginning.”

For those seeking a more intimate evening, Don Jaguar, an exclusive speakeasy lounge within Placēbō, will offer seductive cocktails and bites in a leopard-accented setting, perfect for the sophisticated Hamptons clientele.

Placēbō will open its doors on Thursday, May 23rd, with reservations recommended and available on OpenTable. The restaurant will be open Thursday – Sunday: 5-11pm for diner, Saturday and Sunday, Noon-4pm for brunch.
